Shinshu Meijo, located in Ueda City, Nagano, has been dedicated to sake brewing since the late Edo period over 150 years ago. The brewery draws its water from the central Shinshu Mihara mountain range—an ultra‑soft “obsidian water” naturally filtered through obsidian bedrock. With a total hardness of just 0.95 mg/L, this exceptionally pure, mineral‑low water allows the natural umami of the rice and koji to shine, resulting in sake with vivid flavor and pronounced depth.
