Moet Chandon x AMBUSH Step Forward (750ml)
Country/ Region:
Champagne, France
Background:
The Moët & Chandon x AMBUSH "Step Forward" (750ml) is a historic 2021 collaboration that saw the venerable French champagne house tap Tokyo-based streetwear label AMBUSH and its Creative Director, Yoon Ahn, to redesign their flagship Moët Impérial bottle.
Winemaking:
The grapes are harvested and gently pressed. The base wines undergo primary fermentation, followed by malolactic fermentation to soften the acidity before entering second fermentation. The bottles are aged sur lie (on the yeast lees) in Moët & Chandon’s chalk cellars in Épernay, France, for 24 months, followed by an additional 3 months of resting after disgorgement.
Grapes: Chardonnay, Pinot Noir and Pinot Meunier
Tasting note:
Pale golden straw with green highlights, the wine opens with bright aromas of green apple, lemon zest, and white flowers, with light brioche and toasted grain notes. The palate is smooth and fresh, showing pear, white peach, and apple lifted by fine, crisp bubbles. The finish is clean and lively, with soft citrus and gooseberry notes
Food Pairing:
Its lively fruitiness and crisp, mineral finish pair perfectly with fresh seafood, light poultry, salty, creamy cheeses or delicate Japanese dishes, including lightly salted tempura or premium sushi rolls.
